Roasted Red Pepper Grilled Cheese Sandwich


Good evening! Today my husband had surgery so I decided to please him with a good ol fashion grill cheese sandwich for dinner. I probably haven't made grill cheese since about January or February and so he sure was excited!!! I also made gazpacho to go with it but I will post that another day! While Akhil was in surgery the lovely wife that I am ran over to the Great Harvest Bread Company and purchased a loaf of whole wheat spinach & sun dried tomato bread for this sandwich. This bread is awesome!


Roasted Red Pepper Grilled Cheese Sandwich

2 pieces of bread
1 tsp butter
2 slices of sharp cheddar cheese
3-4 thick slices of roasted red peppers (jared peppers works great)

In a large nonstick pan over medium-high heat, cook the buttered side down of the bread. Top with cheese, red pepper, and then more cheese. Place second slice of bread on top. Cook for 2 minutes per side, or until toasted and the cheese melts.

Roasted red peppers in a grilled cheese sandwich would be great! That bread sounds really good as well.
